Apple Cinnamon Muffins

This is super easy and makes a large batch - you can keep the batter in the fridge for several weeks and make the muffins when you need them.

  • 1 cup Butter
  • 2 Eggs
  • 2 teaspoons Baking soda
  • 1/8 teaspoon Salt
  • 2 cups Sugar
  • 2 cups Cinnamon Applesauce
  • 4 cups Flour
  1. Place applesauce and sticks of butter in large bowl and heat in microwave until butter is melted (approximately 5 minutes - stirring after each minute).
  2. Mix all ingredients together. Bake at 350 degrees - mini muffins for 10-15 minutes, regualr muffins for 20-25 minutes. This mixture may be kept in the fridge for several weeks.
