Apple Pumpkin Muffins

  • 1 1/4 cups Whole-wheat flour
  • 1/2 cup Brown sugar
  • 1 egg
  • 1 tsp cinnamon
  • 1/8 tsp Nutmeg
  • 1 1/4 tsp Baking soda
  • 1/2 tsp salt
  • 3/4 cup pumpkin puree
  • 1/4 cup Canola Oil
  • 1/2 cup milk
  • 1 cup diced apples
  1. Preheat oven to 350 degrees. Spray a 12 cup muffin tin with oil or use paper liners.
  2. Mix ingredients together and spoon into prepared muffin cups, filling about 3/4 full.
  3. Bake for 18 to 20 minutes.
